These sourdough granola bars are not only packed with flavor but also a fantastic way to use your sourdough discard—making them a win for your taste buds and your kitchen efficiency!
Equipment Needed:
Baking dish (8x8) but not larger than 9x9-the larger the pan the thinner you can make the bars
Ingredients
Dry Ingredients
200g Rolled Oats
100g Nuts: Pecans, Almonds, Walnuts, Pistachios Â
10g Chia Seeds
70g Chocolate Chips (semi-sweet)
2g Cinnamon
4g Salt
1/4 cup seeds (chia, flax, sunflower, etc.)
1 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp salt
Wet Ingredients
250g Starter or Discard
150g Honey Â
100g Peanut Butter
10g Vanilla

Instructions
Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
Mix Wet Ingredients: In a small bowl, combine the sourdough discard, honey, peanut butter and vanilla extract. Mix until smooth.
Add Dry Ingredients: In a large bowl add the rolled oats, chopped nuts, seeds, cinnamon, and salt to. Stir until well combined. Add wet to the dry ingredients and mix well.Â
Press into Pan: Transfer the mixture to the prepared baking dish and press it down firmly to ensure even thickness.
Bake: Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown.
Cool and Cut: Allow the granola bars to cool completely in the pan. Once the pan is cooled, you can cut into bars, or freeze them to keep fresh up to 2 months.Â
